It’s the last week of July – can you believe it? The summer is flying by at an alarming pace. Half of me wishes it could slow down a bit so I can enjoy the nice weather while it lasts, while the other half is hoping the next two months blow past even faster because my husband and I are headed to Italy in September and I am sooooo excited. First time across the pond for me!
I’m also coming to realize that it’s difficult to keep up with blogging in the summer. I have been aiming for 2 recipes per week – which is the least that you would see from me in a typical winter week - and it has been a bit of a struggle. I’m torn between spending several hours in the kitchen on the weekend cooking and photographing recipes, and wanting to be outside to enjoy the short-lived Canadian summer. Summer also seems to bring a crazy amount of activities and commitments, from weddings to barbecues to camping trips and any number of fun things that keep us constantly out and about. Plus I still have a full-time job, so there’s that. Anyway.
I subscribe to a whole bunch of other food blogs, and I admire those who seem to post something new and wonderful every day, or at least 3-4 times per week. With my hectic schedule, if I were to start pumping out that much content, the quality would most certainly suffer, and I only want to share the best with you. Deal?
On that note, I did have one other recipe to share with you this week that I made while I was camping last weekend, but in the end I decided not to post it because the pictures weren’t doing the recipe justice. Apparently getting a nice photo in full sun in the summer outside is near impossible for me, and no amount of Photoshopping could salvage the pictures I took. Which is tragic, because the recipe was really tasty: Mediterranean Pita Panini grilled over the campfire. Yum.
I’ll certainly try it again – maybe on the BBQ or in a regular panini press? – but if you’re looking for a good panini or sandwich idea, just include the following: shaved zucchini, sliced roasted red peppers, halved cherry tomatoes, goat cheese, fresh mozzarella, hummus, salt & pepper. The end result was gooey, melty, crispy, and fresh all at the same time – just take my word for it.
